I have finally gotten rid of my Target, Wal-Mart, and all 3 J Crew Cards!  Phew!  Now, only oh….14 more to go!  I don’t know why I just can’t spend them…. guess I really just want to use them on something worth it…

I am meeting both July’s and August’s at the rate I am going…… I am not counting this one, but I had to write about it.  I made a fab meal today, if only it wasn’t wasted on my 2 boys.  Coming to you from my favorite recipe site, Allrecipes….. I made Dijon Chicken & Honey Roasted Red Potatoes.  In addition (yes it was TONS of food), I made a veggie mix of red & yellow squash, red & green Bell Peppers, and some purple onion sauted in olive oil, garlic, seasoning salt, and cayenne pepper.  Gotta have something spicy to go with the sweet!  All the dishes were SUPER easy to make & tasted divine!  The Dijon Chicken would be perfect to freeze for later too!

My wonderful loving husband purchased me a brand new phone!  It’s a T-Mobile Shadow in Copper!  It has all the cool bells and whistles.  I am SUPER excited!  I have been wanting an upgraded phone ever since I landed in my new role.  I so need something that does e-mail when I’m away from my desk.  Pathetic, yes I know….. still loving it!

Let’s see, we’re in the middle of June & already I have:

#1: Registered for a Church – on my way home from work one day, I inadvertantly took a back road that lead me by the church I have been meaning to join.  I figured what the heck!  I went into the office and got our family all registered at St Elizabeth Catholic Church.  It took all of 5 minutes.  I’ve been to this church maybe a handful of times and although it’s not my favorite one, it’s located in Pflugerville and probably the closest Catholic Church to us.  Now for the #2, attending…. baby steps, baby steps….

#11: Made some New Recipes – I found flounder in my freezer one night, so I made flounder almondine.  I was the only one who ate the almondine topping, but I thought it was really yummy!  It was a recipe on the back of the flounder packaging.  Basically, bread and fry the fish.  For the almondine topping, broil almonds.  Then melt butter with lemon and stir in almonds.  Fab!  I also made a new pork meal that will DEFINITELY be added to the bi-weekly rotation.  Again brought to you from my treasured allrecipes, Stuffed Pork Chops, is the kind of meal that makes you feel good inside.  It was SO easy to make, although a bit messy to cook… totally worth it though!  Takes only 30 minutes and looks & tastes like something you’d get a fancy place.  Next time I plan to jazz it up by adding some craisins to the stuffing.  The meal was made better when you tempered it with something sweet as the beef broth made it rather salty.  Two thumbs WAY up for me!

#44: Read book every other month – I have completed Candance Bushnell’s “Trading Up”.  It’s been one of those books I got thoroughly sucked into and could not put down.  Sad, but true.   I think I need to steal from Jenna and Amanda and try to read something from the All Time 100 Novels List….. but that will have to wait till I complete my newest chick lit – Sophie Kinsella’s “Shopaholic and Baby”.  Stop laughing, all reading is good for you!  😛

#102: Netflix Movie once a week – Sunday, June 1st we watched The Invasion.  It starred Nicole Kidman and Daniel Craig & is a take off of Invasion of the Body Snatchers.  I found it interesting, but not great.   Friday, June 13th, my Mom and I watched The Other Boleyn Girl.  I personally really liked it, but it is my style of movie.
