I have made so many new recipes this month that I am not even sure where to start!

Pre-face:  Thanks Amanda for signing me up for the Light & Tasty Magazine!  Without this magazine I may have been struggling with this one.  For anyone interested, I would recommend Light & Tasty.  Easy recipes (read: few ingredients & quick), low in fat and calories.

Let’s see, just this month alone I have made:

~ Lemon Chicken

~ Mandarin Pork Chops

~ Gouda Stuffed Chicken

~ Peppered Beef Tenderloin

~ Glazed Pork Chops and Apples

 Not bad for trying something new only once a month!


Yes, I AM counting the Concealed Handgun License Class as a date.  Here’s why:

~ We were together ALL day

~ without Connor

~ we had lunch & dinner together, just the 2 of us (nothing fancy, but still)

~ btw the 2 of us, we spent WAY more than a typical night out

~ we talked about things other than Connor

All in all, I would say – GOOD DATE!


I feel I am a fairly positive person.  I truly do like to see the good in all things and people.  Recently, I have been trying very hard to maintain a more positive approach to life.

How’s that working for me you ask?  Well, let’s just say I am still not a ball of sunshine….

Even so, I think I do this particular task fairly well especially in the work environment.  I have realized that I have become way more political than I ever thought I could be.  Part of this is learning to coach & mentor which has grown my ability to see the good with the bad.

Still a work in progress, but allot of progress has been made!

Jeff and I decided to pursue our concealed handgun license together.  Stop laughing!  Guns, bullets, killing people – it’s romantic!  😛  I kid, I kid…..  although don’t be shocked to see this under #19: Date Night!

OK, so we decided to take this class.  Now Jeff (as suspected) is an excellent marksman and has been shooting since he was very young.  I, on the other hand, have shot a BB gun maybe twice in my life.  Needless to say I was very nervous about not only handling a gun, but also passing a shoot test.  Jeff was very good & taught me all the gun basics.  We even went to the shooting range together, where he preceded to tell me – “Well, it’s not the gun.  I shot it just fine.”  Nice.

Our class was scheduled for Sunday, Jan 27th.  It’s a 10 hour class!  Yes, 10 hours!  That was no typo.  They bombarded us with all the ways we should NOT use our gun, informed us we basically had almost no rights to shoot anyone or anything, but hey – feel free to carry it all you want…. as long as no one knows you have it.  I did have to pass a shooting test, in which I DID pass (231/250).  I also passed a written exam.  Jeff and I still need to go on down to the DPS to get fingerprinted and turn in our paperwork.  Then wait the standard 6-8 weeks for our license to arrive.  At that point, we will legally be allowed to carry concealed heat.  No, I probably will never carry a gun on my person – but you may never know bc I won’t have to show you…… it’s concealed…..

I know, I know – I haven’t officially received my license, but I am going to cross this one off anyway bc we plan to go to the DPS office this week to apply! 

Here’s the situation.  I plan to run the Mardi Gras 5k this Saturday, Feb 2nd.  Last year I ran this with Connor & it was fairly tough.  I hadn’t really trained for it, but this year there will be no pushing and I am in MUCH better shape.  I feel this course is a good one to attempt to beat my PR.  If I recall correctly, it’s mostly downhill with only one hill. OK, ok so this hill is a straight incline all of the 2nd mile….. sheesh!  I am going to do my best and push myself hard – wish me luck!
